1989

Chapter One

Tasmania’s initial flirtation with whisky distillation was enthusiastic but short lived. The Sorell Distillery was opened on the banks of the Hobart rivulet in South Hobart in 1822, close to the site of the modern Cascade Brewery. This was closely followed by another 16 legal distilleries dotted the island, along with plenty of illegal ones. It is said that Tasmania was intended to be a bread basket for Sydney and the rest of the colonies, growing barley grain to be used as a food source. Evidently somebody forgot to mention this to the Tasmanians who eagerly took to using this grain to fuel a young, thriving distillation industry.

This enthusiasm for spirits and drinking did not sit well with the Lady Jane Franklin. “I would prefer barley be fed to pigs than it be used to turn men into swine.”

That simple phrase, spoken by Lady Jane Franklin in 1838, changed the course of Tasmanian whisky. It was enough to convince her husband, Governor John Franklin, to outlaw the distilling of spirits in Tasmania that same year.

The turn of the century saw Australian federation and the introduction of the distillation act of 1901. This opened up opportunities for the fortified wine industry, however a minimum legal still size of around 2700 litres made it incredibly difficult for those wishing to create craft spirits to have a fair go. And so, until 1992, Tasmania was without any whisky makers – besides the odd moonshiner.

FAQs

So how do you guarantee that your Whisky is of the traditional Lark style?
There are two ways. First of all, our core range Lark products (Classic Cask and Cask Strength) are always distilled at our Coal Valley Distillery. As we evolve our packaging later this year, we will prominently showcase this fact on the relevant product label. Secondly, any limited release products going forward will say which distillery they come from, so Coal Valley Distillery or Bothwell Distillery (or any other distillery for that matter) will be on the label. These will be stylistically different spirits and deliver new and pioneering drinking experiences for Lark fans. We are privileged to have a portfolio of incredible casks from across Tasmania, from some of our favourite distilleries on the island. We will always deliver these in their best light, and will be calling out exactly which distillery they are from if they are to be released as a single malt, or we will call them out as a blended malt where appropriate.

FAQs

When will I receive my parcel?
We use Australia Post to deliver our parcels and they provide all our customers with a tracking number which you can find in your confirmation of shipping email. Please check your spam/junk mail folder if you can’t see it. Due to COVID-19, Australia post has faced some delays. Just in case you need a little something to pop into a gift box or envelope, we have created a downloadable Gift Verification Certificate which you can print at home or at your local print shop. It’s an interim solution while your order is in transit.

Since our humble beginnings back in 1992 around Bill Lark’s kitchen table, to Coal River, Cambridge, Bothwell and back; it's our ambitious and pioneering spirit coupled with our passion to make the best Tasmanian whisky that underpins what we do, how we create and who we partner with.

We will only ever craft Tasmanian whisky.

Forever curious, we continually look to the future, whilst remaining true to our past. Our signature Classic Cask will consistently represent the best in Single Malt Whisky, mastered by our founder and the Godfather of Australian Whisky, Bill Lark, always crafted at our Coal River Lark Distillery, Tasmania.
